Tomato, Basil and Vanilla jam

When you think of tomatoes, jam may not be the first thing that comes to mind. But trust me, this tomato, basil and vanilla jam is a revelation! Combining the natural sweetness of ripe tomatoes with the warm, aromatic notes of vanilla, this unique preserve offers a versatile flavour profile that’s perfect for both sweet and savoury pairings. 

I first saw this jam being made by condiment influencer Claire Dinhut, she was serving it on top of a sweet yogurt based cake at her book launch. I must admit it really inspired me to make sure next harvest I will have to experiment with my flavours using excess crops. 

I of course made this exquisite jam with the tomatoes from the greenhouse and this gorgeous vanilla I picked up in a french market. This jam is an excellent pairing with soft cheeses like brie or goat cheese, adding a surprising burst of sweetness to your cheeseboard. Mostly I've slathered it on warm buttered toast and sometimes drizzled over yogurt.
